THE METRONOME/ BLOG POST 23
Payesh is one of the easiest traditional Bengali desserts to make at home. This rice and milk pudding made in various forms all over the country, as Payasam or kheer. Giving in to my viewers' long standing request for a Recipe Song on something sweet, and keeping in mood with the festive spirit that prevails all over India during this magical period between Dussehra/ Durga Pujo/ Navratri and Diwali/Kali Pujo - here's a recipe song for the easy to prepare, ever popular Payesh - made here with Basmati rice, instead of the traditional Bengali Gobindobhog rice.

SONG LYRICS :
Payesh, payesh, when you want something sweet
Payesh, payesh, the true traditional treat!
Payesh, payesh, for any auspicious date
Payesh, payesh, when you want to celebrate!
Soak the rice, stir in the ghee,
Boil the milk with bay leaf, cardamom and see
That milk reduces to its one third
Now is the time to add the rice, and I have heard...
Payesh, payesh, too much can make you fat
But if you exercise regularly, you don't need to think about that
Stir with one hand, it will stick if you don't look
With other hand, take photo for Facebook
Stir with one hand, till rice is done almost
With other hand you can check your Facebook post
Add the sugar, stir and wait
After it thickens, switch off, refrigerate
Add the nuts if you wish
It will enhance this yummy dish
Payesh, payesh, so creamy and so sweet
Payesh, payesh, such a delicious treat
Payesh, payesh, for any festive date
Payesh, payesh, when you want to celebrate!
