I was introduced to Kerala cuisine by CB, my husband, who's from Kerala. Among the many delicacies that were part of my first Kerala meal, was the delicious Kerala Egg Roast which we had with Malabar Parottas! I have, over the years, tweaked and simplified the recipe to suit our combined Bong and Mallu palates :)

Same number of eggs, tomatoes, onions unless bigger
Turmeric, chilli, salt and cumin, just a bit of sugar
Boil the eggs and peel the shells, make slits along the sides
Then fry the eggs until they're brown, drain and keep aside
Coconut oil is best for this, other oils don't taste the same
Add the cumin, fry the onions on a medium flame

Quick and easy and scrumptious eggs for serving when you're playing host

Add turmeric, chilli and salt, fry and fry and fry
Add tomatoes and the sugar, stir till almost dry
Coat the eggs with the simmering sauce, cover them up with the spice
Then let it roast on the slowest fire, turning once or twice
When the coveriing's caramelized, it looks and smells just right
The Mutta Roast is ready to eat, go on take a bite!
